If you’ve ever stared at a loaf of bread and thought, “It tastes great, but it looks pale,” you know the struggle. Most ovens rely on blowing hot air around (convection), but infrared is different. It doesn’t mess around with the air; it hits the dough directly. It’s instant. Finding the sweet spot Here is the tricky part: the intensity. If your lamp is too weak, you’ll end up with bread that’s dried out and tough before it even gets some color. But go too hot? You’ll torch the tips of the crust while the center stays white. It’s a frustrating balancing act. We handle this by tweaking the filament thickness and the gas pressure inside the lamp. We also look at how fast your conveyor belt is moving. If your line is flying, you need a high-intensity lamp that can “flash-brown” the bread in a matter of seconds.
