Infrared is the right call because it responds immediately—full output in seconds—so the holding zone snaps back after doors open and close. Quartz elements lay down stable, even radiant heat across the display, and the reflector pattern focuses energy where you need it: on the face of the product, not into the oven chamber. Paired with a thermostat or solid-state control, you get tighter holding temps, typically within ±2°C, assuming the lamp is positioned correctly and you manage the ambient load. The install details that actually matter
Installation is straightforward, but placement is everything. Keep the lamp at the proper distance from the display shelf so you don’t get hot spots and glare that dry the top. Make sure the mount and wiring are rated for the wattage and the oven environment, and confirm it fits your deck, rotary, or convection unit’s front setup. Expect strong output and fast recovery, but plan for shielding and easy access to keep the beam aligned and the lens clean.
